
The Taste That Time Couldn't Keep
There was something magical about birthdays in a Bengali home in the 90s.
I still remember waking up to the sweet aroma of পোজয়শ (porridge) slowly simmering in the kitchen. Even before opening my eyes, I knew it was my birthday. মো (Mother) would already be busy, draped in her old cotton saree, stirring the milk patiently while the fragrance of Gobindobhog rice filled every corner of the house.
Lunch was nothing short of a festival. Steaming hot rice, five varieties of ভো ো (crispy fry), শুজতো (Shukto), and the star of the table—bhapa ilish. The sharp pungency of freshly pressed mustard oil blended with the subtle warmth of spices made every bite unforgettable. And then came the পোজয়শ (porridge)... creamy, aromatic, and made with so much love that no dessert since has ever come close.
As evening approached, excitement would take over. Friends would arrive, laughter echoed through the house, and the dining table would proudly welcome my favourites—Basanti Pulao and Kosha Mangsho. The rich aroma of ghee and whole spices drifting through the house still lives somewhere in my memories. Those weren't just meals; they were celebrations of love, family, and togetherness.
Today, life moves much faster. Meetings have replaced afternoon conversations, food is often cooked in a hurry, and birthdays are marked more by calendar reminders than by the smell of পোজয়শ (porridge). Somewhere along the way, that magical flavour disappeared. The bhapa ilish no longer had the same pungent kick, the শুজতো (Shukto) lost its soulful depth, the Basanti Pulao its festive aroma, and even the পোজয়শ (porridge) felt incomplete. I often wondered if the taste was gone forever... or if I had simply grown up.
Then, a friend introduced me to Parthiv.
